So Chrissy and I had great plans to take it easy last night. We were going to make a quesadilla, watch American Idol, do some laundry and write about our trip to San Francisco. Sounds relaxing right? WELL this awesome opportunity came up and none of that happened.
My friend Jonathon decided he would rather go to happy hour and watch the Aztec game than see a musical downtown. I jumped on that opportunity and snagged his President’s Club seats less than 10 rows from the stage and of course the free drink tickets. As Chrissy put it, ” Tis a fine night for presidential treatment at the theatre, I do say” [in her classiest old school British accent]. In a rush, we still managed a fabulous little dinner to-go and it was so good we got home from the musical and made more for lunch today (along with some lime quinoa):
Goat Cheese Pita Panini
- Herbed Goat Cheese (left over from our Herbalicious Goat Cheese Pizza)
- Stone Ground Mustard
- Roasted Red Bell Pepper
- Mini Pitas
Pile it all up and slap it onto your panini grill (or George Foreman in our case). You’ll have yourself a delectable, melty and flavorful little lunch or dinner, or snack for some .
