Prosciutto not-so-Breakfast Sandwich

Remember the Hungry Belly Breakfast Sandwich? I do!

This breakfast sandwich may or may not top it. I’ll let you decide.

Breakfast for dinner is my go-to comfort food. What can I say, I like to break the rules a little.

How did certain items become “breakfast” items anyhow? I believe eggs, pancakes, waffles, sausage and breakfast sandwiches can be eaten at any time of the day.

Well, after that rant I really can’t call this a breakfast sandwich anymore. Everyone has a “breakfast” for dinner binge once in a while.

What’s your guilty breakfast pleasure at dinner time?

Excuse me while I go make another one of these for dinner.

Prosciutto not-so-Breakfast Sandwich

Ingredients

Serves 2

1 slice of sourdough wheat bread, halved

2 slices of prosciutto

1/4 cup raw white cheddar

1 egg, fried

1 egg white, fried

1 green onion, thinly sliced

3 cremini mushrooms, chopped

1 handful of spinach

1 slice of tomato

1 tablespoon olive oil

1/2 tablespoon butter

salt and pepper

 

Directions

Sauté mushrooms and green onions in olive oil. Set aside.

Toast slices of bread. Lay cheese, spinach and tomato on top of one slice. Add on the mushrooms and onion.

Fry eggs in butter and place on the sandwich. Top it off with the prosciutto and the other half of the bread.

Little Yellow Note: While this is technically one sandwich, it can most definitely feed two.

  1. It’s just barely lunch time right now, but I sure could have one of these breakfast sandwiches any time of the day. This would keep me happy all day till dinner (or have it for dinner too). Good and tasty ingredients!
