Guac and Limes

by Lauren

The first time two of my best friends and I made guacamole, we had to make two batches of it. One for the three of us and one for everyone else. Ours had the juice of 3 whole limes in it while everyone else preferred the normal amount, perhaps closer to the juice of 1/2 of a lime? Clearly, we have a small addiction to limes.

We went to Costa Rica a couple of years ago and after far too many Micheladas using Imperial, we probably could have used lime rehab. Well, not really. I still love limes. Almost as much as I love ketchup…

Costa Rica 304

Needless to say after this little disclaimer, I toned down the amount of lime in the recipe for you guys. Not that I wouldn’t recommend adding more, because…I definitely would Rolling on the floor laughing

I’ve been waiting for just the right moment to confess this addiction share this recipe with you. Now that we made carne asada tacos, the time has come my friends!

This really is an infamous guacamole recipe. If I didn’t think people were going to stare and judge, I would eat guac with a spoon. You wouldn’t judge, right?

*Little Yellow Note: You might be wondering why that garnish doesn’t look anything like cilantro. I can assure you it is cilantro though: Italian cilantro! It’s packed with cilantro flavor like nothing I’ve ever had before. If you can find it at your local grocery store or farmers market, we highly recommend it as a regular cilantro substitute.

2 avocados

2 garlic cloves, minced

1/4 cup lime juice

1/4 cup onion, chopped

1 medium tomato, diced

2 teaspoons your favorite hot sauce

3 tablespoons cilantro

1 teaspoon salt

1/2 teaspoon pepper

Scrape the meat out of the avocados into a bowl. Mash the avocado with a fork.

Mix in the rest of the ingredients. Let it sit for 30 minutes so the flavors can meld.

Great! Thanks for letting us know! What type of seasoning did you put on your chicken tacos? I am catering my brother’s graduation party Sunday, and am searching for a marinade or rub for chicken. Let me know! Thanks!
