Buffalo Chicken Fingers

While recovering from having my wisdom teeth yanked on Friday, my mom graciously took me in for the weekend. While she was kind enough to make me smoothies, soups and homemade applesauce, she also tortured me by feeding Chris and my family ribs for dinner…RIBS! Are you kiddin’ me?! As I sat there looking plump as a chipmunk daintily sipping on my lemon orzo soup, everyone else ate like disgusting carnivores. Hmph.

So maybe I was a little bitter…I really wish I could chow down on some potato chips and a cheeseburger about now. Some ribs are also sounding great at this point. Really, anything with substance would be fabulous!

My poor mouth just won’t allow it though. When I’m healed, I will be making more of these:


Thaz right folks. A healthy and simple chicken finger with spicy buffalo wing flavor. With a little less healthy helping of crinkle fries on the side. All you need is love this + chicken:


Today’s recipe is short and sweet. This is a great for an on-the-go dinner. We attempted to make extra and have leftovers for lunch the next day at work. Fail.

We loved them so much that we only had 3 left. That means we ate 1.5 each for lunch. We had a hungry day.


Buffalo Chicken Fingers


8-10 chicken tenders

3/4  cup Franks Red Hot Buffalo sauce

2 cups panko bread crumbs

2 eggs

3/4 cup flour


Preheat the oven to 350 degrees.

Pound the chicken tenders until about 1/2 inch thick. Place chicken in a Ziploc with the buffalo sauce and marinate for 30 minutes. Dredge each tender in flour then the egg and last, the panko breadcrumbs. Lay out on a foil lined baking pan.

Bake for 6 minutes then turn and bake for another 6 minutes.

  1. ohhh how I remember getting my wisdom teeth out and everyone around me eating like they’d been starving in some foreign country-NOT OK!
    I just made Panko crusted chicken for my brothers the other day-they loved it (not to rub it in)…I think you should take a trip to Buffalo and get some real buffalo style wings/fingers;)

    So THAT’S where Buffalo sauce gets in name?! DUH. I always thought it was so silly to call it that since it had nothing to do with buffalo’s. Blonde moment…eek. I definitely want to go there to test out the real stuff now.

  5. I think I will definitely have to try these!My boyfriend puts hot sauce on just about everything so chicken strips marinated in hot sauce should be a winner here..Maybe I’ll make these this weekend..
