Spicy Broccoli and Peanut Slaw

First things first. We ordered business cards a few weeks ago and just realized we haven’t shown them to you!



I know, I know. They are green. There wasn’t a yellow template we liked and this one was too cute to pass up. We aren’t quite ready to throw down a small fortune for a logo and custom cards so this will do just fine for now.

FYI, we got them from Vista Print if anyone else is looking for a smashing deal on business cards!

One more thing, we had quite the dilemma deciding on our official position titles. We decided on the straight forward “Food Bloggers”. It looks a little silly now that I look at it but oh well.

Now about that slaw! The Asian Style Spicy Peanut Vinaigrette is one of my favorite Trader Joe’s dressings. It has just enough spice for my pathetic palate. I can’t handle too much heat while Chrissy can’t get enough hot sauce, red pepper flakes and jalapeño on just about everything we make.

It’s a constant point of debate in the LYK.


The crunch from the carrots, broccoli and nuts with the sweet juice from the dried cranberries and fresh clementines is an unbeatable combination of flavors.

Add a little grilled chicken or some shrimp to this baby and you got yourself a stellar lunch!



Spicy Broccoli and Peanut Slaw


1 bag Broccoli Slaw

1-2 clementines

1/2 cup dried cranberries or raisins

1 red bell pepper, sliced

1/4 cup peanuts, sliced almonds or walnuts

2 green onions, sliced

3 tablespoons cilantro

1/4 teaspoon red pepper flakes (if you want it extra hot!)

1/4 cup Asian Style Spicy Peanut Vinaigrette


Add all the ingredients to a large bowl and drizzle with dressing. Toss and serve.

Add grilled chicken or shrimp for a crispy, sweet and healthy Spring lunch!IMG_4097
