The idea for this bright and beautiful quesadilla was inspired by my new found love for honey goat cheese (thanks Caro!).

We’ve considered making a frosting out of it because it’s so good. Sort of a cream cheese frosting technique only with sweet, yummy, creamy goat cheese…and honey.
I feel that it could be quite fabulous on one of these.
Thoughts?
I am not ashamed to say that I eat it straight out of the package using only my index finger. No crackers required here.
And because I love Chrissy so much, I’ll throw her under the bus and let you all know that she does it too.
But for realz, it’s that good.
Also, it’s berry season! What goes together better than sweet berries and creamy cheese? Not much my friends. Not much.
Pile a little spicy arugula and salty bacon onto a whole wheat tortilla with the flawless berry and cheese combo and you’ve got yourself a tasty meal.
Or an appetizer for that classy dinner party you’re hosting this weekend.
Or perhaps just something scrumptious to hoard all for yourself.
Nothing wrong with that.
One more thing.
A drizzle of your best balsamic vinegar would put this little quesadilla over. the. top.
Into a new dimension of food, if you will.
Strawberry Goat Cheese Quesadilla
Ingredients
3-4 large strawberries
1/4 cup honey goat cheese
2 whole wheat tortillas
1 cup arugula
2 slices of bacon (we used turkey bacon, because it keeps the belly pooch down)
1 green onion, thinly sliced
Balsamic vinegar (optional, but also not optional)
Directions
Chop your bacon into small pieces and cook through until crispy.
Spread goat cheese onto both tortillas.
Layer on the strawberries, arugula, bacon and green onion. Cook in skillet for 3-4 minutes on each side, or until crisp and arugula is slightly wilted.
Drizzle with balsamic vinegar, cut and serve!
