Watermelon season is upon us.
This is the time of year when you eat so much watermelon that your belly is sure to bloat up.
Full of water and melon, but mostly water, it’s so refreshing and painfully scrumptious that you continue to stuff your mouth with the hot pink deliciousness until you resemble a chipmunk.
Bikini or no bikini, you will not stop eating it.
Drool? What drool?
You could careless that someone inevitably asked when your baby was due, mistaking your tummy for that of a mother-to-be’s.
You also float quite nicely in the pool without the help of your Shamu raft, that’s always nice.
Watermelon makes me crave summertime, when the livin’s easy.
Make this salad for your loved ones, friends and yourself. They (and you) will be eternally grateful.
One bite of this perfect combination of tangy feta, fragrant mint, spicy arugula and juicy melon and you’ll immediately being sportin’ wide eyes and a giant smile.

Watermelon and Feta Salad with Citrus Vinaigrette
Adapted from Ina Garten’s recipe
Ingredients
1/4 cup freshly squeezed orange juice
1/4 cup freshly squeezed lemon juice
1/4 cup minced shallots
1 tablespoon agave
1/2 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 cups baby arugula
1/4 seedless watermelon, cut in 1-inch cubes
12 ounces good feta cheese, crumbled
1 cup whole fresh mint leaves, julienned
Directions
Whisk together the orange juice, lemon juice, shallots, agave, salt, and pepper.
Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with vinaigrette to coat the greens lightly and toss well.

I know it sounds strange but trust me on this one, it’s good! Really, really, good. Plus you can prob trick kids into eating greens since there is watermelon in there.
