Lavender Lemon Shortbread Cookies for a great cause!

Aroma therapy meets some buttery scottish shortbread. This, my friends, is a little bit of heaven baked into what we like to call a cookie. Talk about a sure way to relax! Who needs to spend wads of cash on scented oils and candles? Simply pop these things in the oven and your whole house will smell somewhat therapeutic. I say “somewhat” because you might be a little on edge, waiting with excitement, until they emerge from the oven and they are cool enough to eat.. or not.

Shout out to Lauren from  for putting on such an awesome online bake sale to benefit cancer. We donated these puppies, the lavender lemon shortbread. The online bake sale raised around $850 and we are honored to have been a part of such a worthwhile event. And our cookies went for $40, so we are so glad that our dough brought in the, well, dough for cancer research! (pun intended).

Keep in mind that these take about 45 seconds to make in the food processor, so I don’t want to hear any excuses. These little wonders are great to entertain with! They are sure to impress just about anyone.




2 cups flour

1/8 tsp salt

2 sticks (1 cup) butter, softened

1/2 cup lavendar sugar

1 tsp vanilla extract

1 Tbsp lemon zest

1 tsp lemon juice


Using a food processor (it’s the easiest, but another mixer will work, too), pulse to combine softened butter and lavender sugar. Add the vanilla, lemon zest, lemon juice, and salt; combine by pulsing together for several seconds. Add flour, in parts, pulsing to incorporate before adding more. Once all of the flour is added, pulse just until the dough comes together in food processor, just like when making the dough crust. Shape into a log and roll up in plastic wrap, twisting the ends and folding them in. Place in the fridge for at least 20 minutes before cutting and baking, so it maintains shape in the oven. Meanwhile preheat the oven to 350 degrees F. When the dough is ready, take out the the plastic wrap and, while using a sharp knife, make 1/4-inch slice cookie rounds and place them onto a lined baking sheet. Bake for 8-10 minutes, until they are slightly golden around the edges. When finished, transfer onto wire rack to cool.

  2. I love the the ingredients in these. How could you go wrong with lavender and lemon? I’ve been wanting to put the two flavors in ice cream haven’t gotten around to it yet, but crumbling these over some honey ice cream would be so tasty. Great recipe — and congrats on helping to raise that $$!

    Oh my goodnesss, I had honey lavender ice cream in San Francisco and I have been craving it ever since! MMM these cookies would be a great topping over ice cream!
