Peach Caprese Quinoa Salad

A divine combination of savory, sweet and creamy.

I was really craving some caprese the other night. With four soon to be over ripe peaches in the fridge, what’s a girl to do?

Add it into her caprese craving. Duh.

I was also far too hungry to eat just a few slices of tomato and peach with mozzarella and basil so my quinoa obsessed self tossed the toppings into a quinoa salad.

Genius. I know, I know.

Before I get to this recipe I need to tell you a story. I want to make you laugh even if it costs me my dignity.

Chrissy and I were getting our classy on at a wine bar tonight after work. After my first sip of wine we got up from the bar stools to mozy over to a seat outside. Well, the stool was one of those spinning ones that bounces back to a forward position after you get up.

It bounced back without my permission and hit my elbow. The elbow attached to the arm that held my wine glass. Yep, my arm flew up and I dumped the entire glass of wine onto my head/face then proceeded to drop the glass onto the ground where it’s life thus ended.

Don’t worry,  nothing except my face, the wine glass and my dignity were injured in this event. Thank God I don’t cake the makeup on or it could have really been an ugly event.

Peach Caprese Quinoa Salad

Ingredients

1 cup quinoa

2 cups chicken broth

1 peach, diced

1/2 small red onion, diced

1 cup grape tomatoes, halved

3/4 cup fresh mozzarella balls

1/2 cup basil, julienned

2 tablespoons balsamic vinegar, optional

Salt and pepper

Directions

Bring quinoa and chicken broth to a boil then reduce heat and simmer 10-15 minutes.

In the meantime, sauté red onion until translucent. Add tomatoes and peaches to the pan and sauté for 1-2 minutes. Little Yellow Note: Feel free to add in a couple tablespoons of your best balsamic vinegar at this point!

Stir in the basil and mozzarella.

Season with salt and pepper to taste. Serve quinoa with peach and tomato mixture on top.

Quinoa is my protein packed friend. Eat it with fruit, eat it with cheese, or eat it with vegetables. Eat it with all of them at once and it’s blissful. Don’t forget to pack some up for tomorrow’s lunch!

  1. What an awesome idea! Caprese salad is one of my very favorite summer meals and the addition of quinoa makes it ten times better. Then you went and added in peaches? Hello, summer!!

I shouldn’t be laughing (sorry) but it’s too funny, mainly because it sounds like something I would definitely do as well (even though it wasn’t on purpose)! I hope it wasn’t red wine. :/ The stains will getcha.

  6. I just made this salad and to be honest I had some reservations. Peaches and onion and tomato and mozarella? My picky husband would never let that pass his lips! Boy, was I wrong – he loves it; I love it – it’s one of the freshest, summeriest (is there such a word?), delicious salads I have ever made. This is so a keeper in my summer salad recipe box I’m even wondering if I can make this year around – in the depth of six-month winter here in the frozen north this salad would bring some sunshine into our lives. And on top of all that it’s healthy!
