Tailgate Chicken Salad Sandwich

This tasty little gem was prepped on the tailgate and prepared on the go.


On our way out of Albuquerque we stopped at the most amazing grocery store to pick up some chicken salad makings since I was tired of good ‘ol PB & J. Chris would eat it every meal of every day if I wanted to though.

I knew I could assemble sandwiches from the passenger seat as we drove but chopping onions, apples and celery would have been a true test of my abilities as a home cook.

I decided not to test myself and avoided a huge mess by just improvising and doing it on the tailgate in the grocery store parking lot before we took off.


Super easy, super delish and super traveler friendly.

Ok, not as travel friendly as I had hoped. I ended up feeding Chris bites as he drove and a few chicken salad chunks may have hit the floor in the process. Oops…


Just toss it all in and combine. It’s even tasty all on its own consumed with a fork or on some crunchy crackers as a snack.


Tailgate Chicken Salad Sandwich

Makes 6 sandwiches


Toasted bread of your choice with a little extra mustard spread on it.

2 cans canned chicken breast in water (regular chopped chicken breast will work as well)

2 stalks celery, diced

1/2 red onion, diced

1/2 fuji apple, diced

1/2 cup plain Greek yogurt

1/4 cup Dijon mustard

1/2 tsp salt

1 tsp pepper


Thoroughly combine all the ingredients. Spread onto a bread with a drizzle of extra mustard. If I wanted to be more gourmet and wasn’t traveling, I would have added tomato and lettuce to this sandwich as well!

  8. Yum! When my husband did a 5 week criss-cross country trip, we did the same thing (minus tuna…allergies, you know!). Isn’t it amazing how tasty sandwiches are on the road?

  9. I love, love, love chicken salad, but rarely eat it or make it due to the high calorie content of mayo, but I noticed you used greek yogurt and I had never thought of that! I will definitely give it a whirl. Happy Summer ladies. Hope your trip is fun, fun, fun. :)
