Citrus Rosemary Salmon

I knew you didn’t want to do dishes tonight. I just knew it.

Because I love you all oh so much here is a super simple, super duper scrumptious, really healthy, no dish washing required recipe just for you!

I really did have you in mind.

These ingredients are pretty much staples in my kitchen and I hope they are in yours because you will want this meal tonight.

I recommend you serve it with a simple side salad and a glass of refreshing iced tea.

Oh and I apologize for the short n’ sweet blog post, but I have a confession.

Lemon Rosemary Salmon

Makes 4 servings


4 (6-ounce) salmon fillets

1/4 cup extra-virgin olive oil

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 tablespoon minced fresh rosemary leaves

4 lemon slices

1/4 cup lemon juice

1/2 cup white wine

4 teaspoons capers

4 pieces of aluminum foil


Place salmon on individual squares of foil (large enough to wrap them in) and fold up sides to create a little bowl for each. Coat top and bottom of salmon fillets with olive oil and sprinkle with salt, pepper, and rosemary. Top the each piece of salmon with a slice of lemon, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.

Place a grill over medium-high heat. Place the foil packets on the hot grill and cook for 8 to 10 minutes for a 1-inch thick piece of salmon. OR place in the oven at 375 degrees for 25 minutes.

Serve in the foil packets.
