Pesto n’ Peas Pasta Salad

How is there no pasta salad recipe on LYK yet??

I have so many up my sleeve that the seams are bursting!

Uh, that was corny, sorry.

Anyways, here is a new favorite that happens to be posted just in time for football season potlucks!

Maris at In Good Taste posted a whole round up of great ideas for football season.

If you need a little extra inspiration, I highly recommend her post!

Chris is obsessed with pesto in the same way he is obsessed with PB&J.

You know, the “I can eat this for breakfast, lunch, dinner and dessert” way.

Well, at his request for pesto, I made this to take down to the beach with us in Hawaii. We ate it between snorkel sessions.

It packs up quite nicely in a little cooler, alongside freshly picked guavas.

OH, I forgot to tell you guys! We picked fresh guavas and avocados in Iao Valley, Maui.

Well, Chris picked them, I was the designated picked fruit catcher, posted down below.

Pesto n’ Peas Pasta Salad

Ingredients

1 lb Orecchietti pasta

1 cup prepared pesto

1 lemon, zested and juiced

2 cups frozen peas

1 (2.5 oz) can of sliced black olives

1 pint grape tomatoes, quartered

1/2 cup green onions, sliced

1/2 cup garlic and herb crumbled feta

Directions

Cook pasta according to package directions. Let cool.

Combine pesto and lemon zest and juice in a large bowl.

Toss together pasta, peas, sliced olives, tomatoes, green onions and feta in the large bowl with pesto/lemon juice mixture.

Let sit in the fridge for 30 minutes to allow the flavors to develop. Serve!

    I try to sneak as many veggies as possible into things. It really helps with the guilt of eating a pound of pasta! :)
