Banana RumPkin Milkshake

Yep, I just said Rumpkin. Rum + Pumpkin = RumPkin.

I don’t know about you, but I have really been missing the LYK Relaxation Station posts!

Now that Summer has passed, the time for summery cocktails is over.

Which means…the time for Fall cocktails has arrived!

Cocktails with pumpkin, cream and autumn spices.

Even though this is technically a cold milkshake, deep down in your belly you will feel warm and tingly.

I suppose banana rum will have that effect on people.

This idea came to me last night when I topped my vanilla ice cream with a scoop of pure pumpkin puree and a sprinkling of homemade pumpkin granola.

(Try that little concoction for a non-alcoholic dessert. It’s fab.)

Well, my always-inspiring mother decided to take my dessert to the next level when she poured banana rum onto it.

I wasn’t about to be that naughty. That was…until I tasted it.

Thus, the Banana RumPkin Milkshake was born!

Banana RumPkin Milkshake

Adapted from How Sweet Eats

1 1/2 cups vanilla ice cream

1/2 cup pumpkin puree

1/4 cup half n’ half

1/2 teaspoon pumpkin pie spice

2 ounces banana rum (or regular rum)

1/4 teaspoon nutmeg, freshly ground

1/2 teaspoon orange sprinkles, optional

Using a blender or immersion blender, blend together the ice cream, pumpkin puree, half n’ half, pumpkin pie spice, and banana rum.

Top with freshly ground nutmeg and orange sprinkles.

Little Yellow Note: If you don’t have any banana rum, regular rum or Frangelico would be just as tasty!
