Almond Joy Banana Bread

by Lauren

Almond Joy and Reese’s are the two candies I will admit to flat out stealing from my brother’s Trick or Treat bag as a kid.

I know, I know. The fair way to go about it would have been within the confines of the Sibling Halloween Candy Trading Game.

Please tell me you partook in this game? Or maybe you still do…I won’t judge.

I just love those Almond Joys though.

Besides, my brother couldn’t hold it against me forever. Smile

Baking makes the house smell good. But you knew that already.

Well guess what?

Baking banana bread makes the house smell so good you might just attract strangers into your home as the scent wafts through the neighborhood.

Isn’t it amazing that the most unappealing banana can transform into such a moist, lovely bread and make your house smell like heaven?

That’s right, the heaven I’m headed to will smell like banana bread.

Now that we’ve established how wonderful banana bread will make your house neighborhood smell, lets chat about the extra goodies inside this very special banana bread recipe.

Almonds. Chocolate. Coconut.

‘Nough said.

Ingredients

2 cups all-purpose flour

3/4 teaspoon baking soda

1/2 teaspoon salt

1 cup sugar

1/4 cup butter, softened

2 large eggs

1 1/2 cups mashed ripe banana (about 3 bananas)

1/3 cup plain low-fat yogurt

1 teaspoon vanilla extract

1/2 cup milk chocolate, roughly chopped ( or 1/2 cup chocolate chips)

3/4 cup slivered almonds

1/2 cup sweetened shredded coconut

Directions

Preheat oven to 350°.

Combine the flour, baking soda, and salt, stirring with a whisk.

Cream together sugar and butter in a large bowl. Add the eggs, 1 at a time and beat until combined. Add banana, yogurt, and vanilla; beat until blended.

Add flour mixture, beating on low until combined.

Fold in chocolate, coconut and almonds.

Pour batter into an 9 x 3 inch loaf pan coated with cooking spray. Bake for 1 hour. Cool 10 minutes in pan on a cooling rack. Remove from pan and let cool.
