I have gone and done it friends.
I’ve spiked my soup.
Spiking milkshakes was definitely a new one for me, but now I’ve spiked soup.
What can I say? It was a gloomy day, I’m unemployed and my tiny house smelled like my dog.
Slow cookers always waft lovely scents through the home (and cover up bad ones). They also bring about such an awesome Fall feeling, I just had to do it.
As for the addition of alcohol…well, like I said, it was a gloomy day.
Would it be considered drinking on the job to eat this for lunch at work?
Perhaps, but it will be worth the risk.
I just wouldn’t get too close to your coworkers, your breath may lead them to suspect foul play.
In case of emergency (and I say emergency because you won’t want to freely share this with just anyone), if they do ask if you’ve been drinking, simply smirk and offer them a taste of this soup!
They’ll let you off the hook, guaranteed.
The tequila in this nutritious soup brings out such a depth of flavor and gives it an authentic Jose Cuervo flare that can’t be beat.
I nearly burned all my taste buds off attempting to taste it straight from the slow cooker, but I could still tell that this was no ordinary soup.
Prep at night, turn the slow cooker on in the morning, head to work and come back to a hot n’ steamy, alcoholic flavorful, Mexican soup.
Slow Cooker Chicken Tequila Soup
Ingredients
1 onion, cut into 8 wedges
1 cup frozen corn
1 (28 oz) can diced tomatoes
1 (4 oz) can green chiles
2 cloves garlic, minced
1/4 cup cilantro, chopped (plus more for garnish)
5 chicken tenders, cut in 1-in chunks
2 cups chicken broth
4 tablespoons tequila
1 teaspoon coriander
1 tablespoon cumin
1 teaspoon poultry herbs (or oregano)
1/2 teaspoon salt
avocado, cheese, sour cream for garnish
Directions
Place onions, corn, tomatoes, garlic, and cilantro and salt into slow cooker and mix well.
Places chicken on top of the tomato mixture. Combine broth and tequila and pour over the chicken and tomato mixture. Cover and cook on high for 4-6 hours (the longer the better!).
Serve with chunks of avocado, shredded cheese and sour cream.

Gotta make this …. tonight. The latest, tomorrow. Freein here. Soup is the answer. With booze …. even better. I might need to replentish my tequila supply. Often use it to marinate salmon and halibut. Of course, in cheesecakes, totally necessary too!

Ooh-how I do love all these hearty southwestern soup recipes. However, yours does stand out from the others–slow cooker style and a zip of tequila. I could go for a bowl of this now-yum! Great recipe and awesome pics-well done!
