LYK Celebration Station: Pear Ginger Cider and Apple Butter Tartlets

 I know it has been a while but the Relaxation Station is back with a new face and name!  It is my honor cordially invite you to the LYK Celebration Station.   Although the sweet sensations of summer flavors have come and gone, the season of celebrations has just begun.  And once you try today’s features you’ll know autumn is in full swing (despite bi-weekly heat waves in southern California).

My favorite thing about both these recipes is that they are easy enough to whip together and enjoy with companion, but scrumptious enough to be the hit of any party.

First up: Apple Butter Cheese Tartlets

I used a mini-muffin tin and cut my pastry sheet into pieces one square inch pieces for a guilt free size approach, despite the fact that I went on to eat almost half the tray myself over the next 24hrs.

I used a Gruyere cheddar cheese from Trader Joes that Chrissy has taken quite a liking to lately.  Brie cheese also tastes phenomenal on these bites.  And if you really want to mix things up try a pumpkin butter instead of honey apple butter!

Once your tartlets are ready, just combine the ingredients for the Spiced Pear Ginger Cider, heat, and ENJOY!

Spiced Pear Ginger Cider

2 parts spiced pear cider

1 part spiced rum

Optional Additions:

-Ginger (to taste)

-Cinnamon (to taste)

 -Orange

Directions:

Combine all ingredients EXCEPT the RUM in a pot and heat to a boil. Remove from heat and add rum.  Garnish with an orange wedge and top with cinnamon.

Apple Butter Cheese Tartlets

 1 Sheet of pastry dough

1/3 Cup Honey Apple Butter

1/3 Shredded Gruyere Cheddar Cheese

Directions:

Pre-heat oven to 400 degrees.  Grease baking dish with cooking spray.  Cut pastry sheet into the pieces to fit muffin tin.  Press down pieces into cups.  Put a large dollop of apple butter into each pastry cup.  Bake for 10 minutes.  Remove from oven.  Top with cheese.  Replace tartelets in oven and bake until cheese is melted and pastry is golden on the edges  (less than 5 minutes).
