There are way too many mornings when I wake up with this Jack Johnson song stuck in my head:
“Maybe we can sleep in
I’ll make you banana pancakes
Pretend like it’s the weekend now…”
The worst part is, those are the only lyrics I can remember so I just keep repeating them.
Over..and over…and over.
I figure it’s probably because 1. I wish I could be sleeping in and 2. I often go to bed thinking about food, so when I wake up I’m naturally still thinking about food. The song is fitting for my morning mood I suppose.
Does anyone else dream about food (literally)? That’s a topic of convo for another day…yikes.
Regardless, the singing (and dreaming) about food is slightly embarrassing.
Well, today I decided it was the universe’s way of telling me to just make the darn banana pancakes waffles. So I did.
Why waffles instead of pancakes? Simply because I own a waffle maker and I’ve only used it one other time.
If you’re really feelin sassy, grab my new favorite grinder from Trader Joe’s: Sugar, Chocolate and Coffee Beans. Grind some of that on top of these and you’ll be loving life.
Chocolate chips inside aren’t bad either.
Oh, and I finally had a chance to bust open the Canadian maple syrup we bought at the St. Lawrence Market in Toronto!
These are also waaaay easy so there are no excuses for not making them.
My, my, I could use another one…or four of these right now.
1 cup white flour
1/4 cup whole wheat flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1 teaspoon vanilla
1 cup milk (or soy milk)
1 ripe banana, mashed
1/4 cup chocolate chips, optional
Preheat waffle iron. Sift together flour, baking powder, salt, cinnamon, and nutmeg. Whisk in milk. eggs and optional chocolate chips.
Spray waffle iron with non stick spray. Follow waffle iron instructions according to manufacturer. Cook until golden brown and crispy on the outside.
Top with maple syrup and Trader Joe’s Sugar, Chocolate and Coffee Bean Grinder.
