Weekend Round Up & Prosciutto Wrapped Blue Cheese Stuffed Dates

by Lauren

As Chrissy mentioned, we threw quite the PJammy birthday celebration this weekend for her and Pearl.

So just what did this slumber party entail?

Onesies? Check.

Gourmet food? Check.

Totally awesome  birthday cake? Check. (Thanks Sandy!)

More scrumptious foods? Check, check, check!

It’s so much fun to feel like a kid again!

After the slumber party we headed home to get ready for our friend Shelbi’s wedding.

It was so much fun to dance the night away and watch these two love birds get hitched!

(Yes, that is in fact a Green Bay Packers Cheesehead cake.)

The bride and the wedding were absolutely gorgeous. Congrats Shelbs and Taylor!

On Sunday, Chris, Pearl and I ate way too much at the Kriger family’s infamous Charger tailgate party.

There was enough Mexican food to feed a pack of hungry wolves!

We had enchiladas, bean and cheese burritos, taquitos, quesadillas, tamales, rice and beans, carne asada, pollo asada, ceviche, and the list goes on.

Not to mention just how impressive it was that everything was made in the Qualcomm Stadium parking lot.

We didn’t even have tickets to the game, so we literally came for the party and it was SO worth it.

P.S. I promised a recipe for the gourmet tray of food Chrissy is holding (up top). Welp, here you go!

Pearl’s Prosciutto Wrapped Blue Cheese Stuffed Dates

Dates, seeded

Blue Cheese, cut into chunks

Prosciutto, sliced into strips

Preheat oven to 375 degrees.

Stuff dates with a chunk of blue cheese. Wrap in a strip of prosciutto and poke with a toothpick to hold in place.

Bake for 15-20 minutes or until crispy.

Little Yellow Note: These were devoured before I snapped a picture of them after the baking process, so what you see below is not what your final product will look like.

After that foodie round up, I’m off to eat carrots for the rest of the week!
