Orange Basil Quinoa Salad

I bet you were drooling over this tasty Vinaigrette, just wondering what in the world we would drizzle it over.

Well, wonder about it no more. A zesty quinoa salad was the recipient of such a delightful dressing.

With some tasty vine-ripened tomatoes, avocado, garbonzo beans, toasted almonds, shallots, orange zest and quinoa, you will have yourself a bright and flavorful quinoa salad.

It’s the perfect scruptious little side-dish.

I ate this for three days straight. I only stopped because I ran out. That was a sad moment. Good thing its a cinch to whip up the night before and portion it into helpings that will last you the week!


Orange Basil Quinoa Salad

Serves 5-6


1 can garbonzo beans, drained

2 medium tomatoes, diced

1 ripe avocado, diced

1/4 cup shallot, chopped

1 cup quinoa, uncooked

2 cups chicken broth

½ cup sliced almonds, lightly toasted

2 tsp orange zest

¾ cup Orange Basil Vinaigrette




Bring chicken broth to a rolling boil and add quinoa. Cover and simmer on low for about 15 minutes, or until all of the liquid is gone. Transfer to a mixing bowl and let cool.

Make the Orange Basil Vinaigrette (click on link to see directions). Lightly toast sliced almonds for a few minutes in a saute pan, stirring often. so they don’t burn.

Add tomatoes, shallots, avocado, orange zest, toasted almonds, garbonzo beans, and Orange Basil Vinaigrette to the cooked quinoa and mix together.

  2. Yes, I was drooling over your dressing recipe and have bought the ingredients to make it. I’ll be dressing regular green salad with it tonight and I’m guessing this quinoa will make an appearance on the menu early next week!

    Awesome! Yep, as soon as we created the vinaigrette masterpiece, I immediately wished that we had made more to dress a tasty dinner salad. Hope you love it!

    I totally agree with you. It’s too hard to turn an avocado down when they are just ripe and ready to be eaten. They seem to make their way into all sorts of meals. But that’s fine by me. Hope you like it!
