Blueberry & Blackberry Scones

Everybody has a favorite coffee shop treat.

Mine was always the scone. But I always preferred my Momma’s freshly made scones over the dry, crumbly ones that Starbucks will sell you.

Just for the record, in case any of you want to take me out for coffee, I probably wouldn’t turn a Starbucks scone down, I just wouldn’t go out of my way to purchase one. I’d hold out for the real deal . Capeesh?

 

These drop scones are perfect for a morning treat.

 

When they are fresh out of the oven, the blueberries are bursting with flavor and often oozing out onto the baking sheet.

Strawberries ‘n’ Cream Scone

Blueberry & Blackberry Scones:

Makes 10-18, depending on the size.

Ingredients:

2 cups whole wheat flour (or 1 cup wheat and 1 cup white)

2 Tbsp wheat germ

2 tsp vanilla

1/8 tsp salt

2 tsp baking powder

1/2 cup milk (adding a little more if dough is too dry)

2 eggs

1/4 cup sugar

9 oz. fresh blueberries (about 1 1/2 packages)

6 oz. fresh blackberries, halved

4 Tbsp cold butter, cut into small pieces

cinnamon-sugar, for garnish

 

Directions:

Preheat oven to 400 degrees F. Mix together flour, salt, baking soda, sugar, wheat germ. Cut in butter with pastry cutter, two knives, or your hands, until it is a sandy-like consistency. In a small bowl, mix the eggs, milk, and vanilla together, then add this to the flour mixture to form dough. Start with less milk and gradually add more if dough is too dry. Fold the berries into the dough, to distribute evenly, but not crush. Spoon dough mixture onto a pizza stone, or lined baking sheet; they can be snug since they don’t expand too much in the oven. Sprinkle with cinnamon-sugar and bake in preheated oven for 12-15 min.

    As I walked into Sprouts over the weekend, the berries were on super sale and I bought about 8 packages. Scones were the obvious go-to. Yum! Now I have to figure out what to do with the rest of the berries…
