St. Patty’s Day Leftover Solution: Reuben Sandwich

St. Patty’s Day is just around the corner and while this may be a tad premature, posting about left overs before we’ve even had the real meal, I would like to argue that it’s never too soon to be planning for meals.

Case in point – Chrissy and I often discuss dinner plans over breakfast. No shame, just planning ahead.

So, what do you do with all that leftover corned beef? It’s almost as daunting as the question posed at Thanksgiving in regards to the giant pile of leftover turkey.



Well, my hungry friends. I’ve got a tasty solution to this problem.

A reuben sandwich!

Leftover corned beef, sauerkraut, Swiss cheese, Dijon and a homemade thousand island dressing all warmed up and squished between two crusty pieces of rye bread.

Just imagine Sunday afternoon, post-St. Patty’s evening, and getting to bite into one of these guys.


Ooey, gooey, salty, deliciousness with a side of potato chips and cornichons.

You’ve got to try them.


Reuben Sandwich

Rye bread

Corned beef, roughly chopped


Swiss cheese

Dijon mustard

Thousand Island dressing (recipe follows)



Butter one side of each piece of bread. Spread Dijon and thousand island dressing on the opposite side of one slice. Top with cheese, sauerkraut, and corned beef. Top with another slice of bread, butter side up. Place onto a grill pan and cook 4-5 minutes on each side.

Little Yellow Note: The amount of each of these ingredients is completely dependent on your preference, so go crazy!

Thousand Island Dressing


1/4 cup mayonnaise

1 tablespoons ketchup

1/2 tablespoon white vinegar

1 teaspoons sugar

1 teaspoons sweet pickle relish

1/2 teaspoon minced white onion

Pinch of salt and pepper


Whisk together all ingredients until combined.
