We did some kitten sitting this weekend.
We think this “cat” might be Spiderman’s newest guise.
Or perhaps he’s just a untrained tiger trapped in a kittens body.
Needless to say, things got mildly out of hand.
He tried to eat my pizza and that’s where I drew the line.
Once it had been saved from its imminent death by kitten, we were able to eat some seriously gourmet pizza.
Shaving asparagus is a bit of a tedious task but it is so worth the hard work!
Not only does it look gorgeously rustic, it also tastes divine.

The simplicity of this pizza is what makes it so perfect for Spring time.
Tangy herbed goat cheese with creamy mozzarella and a squeeze of tart lemon just might be my new favorite flavor combination.
Perhaps a goat cheese and shaved asparagus salad with zesty lemon vinaigrette?!
Toss some roasted chicken in there and you could even feed it to your man!
Two recipes, one flavor combo.

Lemon Asparagus Goat Cheese Pizza
Ingredients
1 pizza dough
1/2 lb. asparagus, shaved
5 oz. herb goat cheese
8 oz. fresh mozzarella, sliced
1/4 cup green onion, sliced
1/4 cup fresh lemon juice
2 teaspoons lemon zest
1 clove garlic, minced
1 tablespoon olive oil, plus more for drizzling
salt and pepper
Directions
Preheat oven to 500 (with the pizza stone inside, if you have one). Toss asparagus with lemon juice, garlic, 1 tablespoon olive oil, salt and pepper.
Drizzle olive oil over dough and bake 4-5 minutes. Remove from oven and lay slices of mozzarella over the dough. Pile on asparagus mixture and sprinkle with goat cheese crumbles and green onion. Bake 15-20 minutes or until asparagus edges are golden brown and cheese is melted.
Remove from the oven and top with lemon zest. Serve with wedges of lemon on the side.

Yes, it’s still early in the morning and yes I should be working hard, but instead I’m thinking about what I’m going to make this week for dinner and this pizza is on the list! We finally had a warm sunny weekend in the NW and I’m so ready for spring weather and flavors!

Most likely supercat wanted a bit of goat cheese. Ugh.
In my opinion …. double icky. I cannot tolerate anything goat. The odor is totally unappealing to the point of sickening. Not sure how folks eat this stuff day after day. On just about everything. Why ruin a perfectly good pizza? Very puzzling.
What is the sodium content of goat cheese?
