I took some “me” time this weekend. For once, I had nothing on the calendar and took full advantage of it.
I woke up at 7:30 a.m. on Saturday! What kind of 24 year old does that? I must say, it led to very productive day and I might try it more often.
I kicked it off by walking down to the beach for some much needed yoga. When I got home I threw in a load of laundry and started making a salad for lunch.
I threw together a basil dressing that was darn tasty. Next time, I’ll attempt to measure the ingredients so I can share the recipe. Whoops.
Chrissy and I went shopping for some new workout attire. I walked away with new workout attire and…a Gap credit card. Whoops again.
Saturday night, we went to dinner at an amazing restaurant that I have been dying to try for months called Isabel’s Cantina.
Sunday morning I went to church, ate the best smoked fish taco ever, then made this lovely drink and carried it down to the beach for a seaside refresher.
I had the urge to put a little twist on the basic agua fresca. Our basil plant is in absolute abundance right now and I can’t seem to control it in anyway other than through consumption.
So, we’ve been consuming with recipe’s such as this pretty in pink drink.
Anddd with this, this and this.
Cheers to herbs in your drink!
Watermelon Basil Agua Fresca
4 cups watermelon, cubed
1 cup cold water
1 cup lime flavored soda water
1/2 cup fresh basil leaves
1/4 cup lime juice
2 teaspoons honey or agave (or more if you like it sweet!)
Place all the ingredients except the soda water into a blender. Puree until smooth. Pour into four glasses and top with chilled lime flavored soda water.

Water melon is so sweet, and refreshing. After I have eaten a bowl full of water melon I drink the juice right out of the bowl (such a lady) so why not make it into a drink?

Watermelons are my favourite. They are a refreshing nutritional powerhouse. Also, if you cannot get your hands at organic fruits watermelons are always a safe choice. Your fresca looks delicious, by the way.

I didn’t know that little fact about organic fruit. Thanks!

Lovely! I made something similar last year but perked it up with a little green chili. The combination of watermelon and basil is always so refreshing! And your post brings back fond memories of being 24…
