I’m creatively challenged in the DIY arena. Chrissy and I once attempted mod podge coasters as gifts. After mass amounts of makeshift sawing while wearing flannel to channel our inner lumberjack, we made it work…sorta.

Let’s just say that was last time I tried to use my lack of carpentry skills to make Christmas gifts, I’ll leave that to Chris from now on.

Last year we attempted homemade snow globes using mason jars and fake glitter snow. I thought stuffing a bear inside one would be a cute idea.

In the end, it looked like I had rolled a bear in glitter and captured him in a jar. We kept that one for ourselves.

These chewy oatmeal bars are really tasty and a much safer option than coasters or snow globes.

Despite the fact that I’m sure your friends would rather have cookies and candy this time of year, you should take them by surprise and totally switch it up on them.

I just hope for your sake that they don’t take you giving them health food for Christmas a rude "hint" as opposed to a generous gift.

Chewy Pumpkin Cranberry Oatmeal Bars

Adapted from Kath Eats

Ingredients
1 1/2 cups rolled oats
1/2 cup chopped walnuts
1/2 cup dried cranberries
1/4 cup dates, chopped
1/4 cup pumpkin seeds
2 tablespoons flax seeds
1 teaspoon cinnamon
1 teaspoon pumpkin spice
1/2 teaspoon kosher salt
3/4 cup milk
1/2 cup pumpkin
3 tablespoons honey
1 egg
1 tsp vanilla

Directions

Preheat oven to 350. Combine the dry ingredients in a large bowl. In a separate bowl whisk together the milk, pumpkin, honey, egg, and vanilla. Pour wet ingredients into the dry and stir to combine. Pour into a parchment lined 9×9 inch baking dish and bake for 35-40 minutes. Let cool before cutting into rectangles and store in refrigerator or freeze for later.

  1. I love making homemade gifts during the holiday season. I couldn’t imagine making snow globes though! Last year, I put together small jars of peppermint hot fudge :)
