Chrissy, the Birthday Girl! {+ Caramelized Onion Dip}

Newsflash: On Friday, I joined the Quarter-Century Club. Just in time too…apparently crazy people think that the world is ending in a couple of days, or so I’ve seen on Facebook.

Don’t be fooled by our matching panda and monkey onesies. I really did just turn 25, not 5.

I am so blessed to have such amazing friends and family in my life; and I am surrounded with more love from these dear people than I know what to do with.

With that said, here is how I celebrated this milestone birthday:

My awesome co-workers surprised me with a bagel party and sparkler fun. My friend, Carrie, and I almost share the same birthday so we got to frolic around with sparklers scintillating as we skipped along, trying to be careful not to light one another on fire.

Then, I skipped work a little really early (with permission, of course), and came home to big

H-a-p-p-y-B-i-r-t-h-d-a-y sign and a lovely present from Lauren and Chris.

Good thing everyone was at work, because popping bottles and free reign to noise makers can cause quite a racket.

Later that night my pals and I shared pizza, wine, cheese, tons of chex mix, and an attempt to play Apples to Apples.

On Saturday, I headed to the inland parts of San Diego to meet some awesome people and embark on a 6.5 mile hike through Iron Mountain. When we reached the top, the view was absolutely breath-taking. Let me show you…

After 2 days of  torrential rain, God reveals an absolutely glorious day. He’s awesome like that.

Then, Pearl and I had our annual Pajama-Jam Sleepover Party, where our onesies, long-johns, and nighties made quite the fanfare.

A spectacular spread of food was laid before our guests, per usual. Bacon, brie & apple pizza, Mediterranean pizza, BBQ Turkey meatballs, crab stuffed mushrooms, veggie platter with hummus, cheese & cracker spread and the fan favorite–the Caramelized Onion Dip.

Once the onions were finally caramelized, the rest of the dip was easy to throw together and the result was super tasty, served with a side of Ruffles.

The dip is a little on the denser side with all of the onions, so you may have some broken chips to fish out. Just double up on chips for reinforcement.

Creamy Caramelized Onion Dip

Adapted from Food & Wine

Makes about 3 cups of dip


2 Tbsp unsalted butter

3 medium onions, halved and thinly sliced

3/4 cups sour cream, at room temperature

3/4 cup Greek yogurt

8 oz cream cheese, softened

1 Tbsp flat-leaf parsley, finely chopped

1 tsp fresh thyme, finely chopped

1/2 tsp onion powder

1/2 tsp Worcestershire sauce

1/4 tsp salt, or to taste

1/4 tsp black pepper

Potato chips, for serving (we used Ruffles)


In a large skillet, melt the butter. Add the onions and cook over medium-low heat, stirring occasionally, for about 1 hour. Depending on your stove/skillet it may take more or less time for onions to caramelize, but you will know when they are done when they are light brown in color. Let the onions cool slightly, about 10-15 minutes.

Transfer the onions to a cutting board and coarsely chop. In the stand-mixer bowl, with the beater attachment, mix the sour cream with the cream cheese, parsley, thyme, onion powder and Worcestershire sauce until smooth. Mix in the onions and season with the salt and pepper. Serve at room temperature.

Serve with Ruffles, or your favorite chips, crackers or bread.

*Little Yellow Note: to lighten up the dip, you can use light sour cream, nonfat Greek yogurt, and light cream cheese.
