Lemon Cranberry Chicken Salad Sandwich

It seems like the wedding has officially kicked into high gear. Full force planning has ensued and the engagement photos have arrived.

I’ve also got some great news. Well, it’s not great news for you per say, but I thought you’d be interested and could possibly even give some much needed travel pointers.


Our first honeymoon stop has officially been booked: Portugal! We fly into Lisbon and will be staying in the Algarve region.

Have you been there? Any must eat or must see ideas are greatly appreciated (mostly must eats though).

If all goes according to plan, we’ll be driving from the Lisbon airport straight to Algarve then over to Marbella, Spain and paying Seville a visit then ending up in a Lisbon for a few days before we fly out.


Spending countless hours (or weeks) in the car together is one of our favorite past times so we thought a Portuguese/Spanish road trip was an appropriate celebration.

It’s hard to believe it’s all really happening! And so begins the countdown until the wedding…201 days to be exact – no I didn’t count them out, the wedding website automatically tells me this.


Oh right, there is a sandwich to talk about…this is a food blog after all.


This one knocks most other chicken salad sandwiches out of the park if you ask me. The walnuts and cranberries were definitely a win-win combo and with a little spritz of lemon juice, perfection!

It’s healthy as usual since I used Greek yogurt with just a touch of mayonnaise. I usually can’t stand mayonnaise but it always seems to add a little something extra to chicken salad sandwiches that Greek yogurt just can’t replace.


The cranberries were totally a last minute addition I must say, my favorite part is the surprise pop of sweetness that they provided.

Lemon Cranberry Chicken Salad Sandwich

Makes 4 sandwiches


6 chicken tenders, cooked and shredded

½ cup Greek yogurt

¼ cup mayonnaise

2 tablespoons lemon juice

¼ cup walnuts, roughly chopped

3 ribs of celery, diced

3 green onions, thinly sliced

Romaine lettuce

Sourdough bread

Salt and pepper


Add all ingredients to a large bowl (or directly into Tupperware) and toss to combine. Season to taste with salt and pepper. Add to a slice of bread and top with lettuce.

    Long time reader,first time commenter! Many congratulations on your engagement and impending wedding. Portugal is a wonderful place and if you have the opportunity to visit, there is a lovely fishing town called Alvor that has a wealth of restaurants. They have big grills outside for cooking the fish that has literally just come off the boats. Highly recommend! We live in Ireland and have fond memories of Portugal, we don’t often have the chance to eat outdoors due to the volume of rain we see here :) I wish you continued good health and joy for the future.

    Hi Catherine! Thanks for commenting :) I will definitely check that little town out, it sounds really amazing and unique. Can’t wait for that fresh fish! Yummmm. We just bought Rick Steve’s book so that should help guide us a bit.
