Let’s be real for a minute. I bet that when you hear “pudding” you really hear “Snack Pack.”

It’s ok, me too. No shame in that. As kids, we didn’t know any difference.

If you were lucky enough, those glorious little snackies appeared in our lunch bags, day after day, and were the most coveted item in the cafeteria, well, besides Gushers.

Snack Packs reminds me of the legendary film, Billy Madison, and this clip. Great movie.

Now that we aren’t 6 any more are grown-ups (I use that word loosely), go throw away that Snack Pack you were about to peel open, and dig your spoon into a jar of this heavenly stuff.

This is about to become your new favorite snack, and fake dessert.

Yup, fake dessert. Because “pudding” sounds like a dessert option. But with this being healthy and all, you can eat it for breakfast, a midday snack or when you are craving something sweet & fruity.

The tropical flavors in this recipe are to die for. It makes you feel like you are on an island somewhere, sipping a pina colada at noon, listening to the ebb and flow of the tide, and soaking in some vitamin D (no, not from the pina colada. I don’t think those have any vitamins).

And then you get a little sad because you come back to reality, and realize that in fact you aren’t getting some R&R on some tropical location, but sitting in your walled up office, instead.

We can dream.

Note to self, and to you: don’t eat the whole jar in one sitting… with the water retention properties of the chia seeds, you might blow up like a water balloon. I can’t be sure of this, but I can only begin to imagine that is what would happen. And then Oompa Loopas would come out of random places and start singing a song about how you shouldn’t have done that.

However, if anyone has ever experienced a chia-seed overdose, please contact me, stat! I am just so curious if my imagination in on cue.

We are huge fans of chia seed pudding, so do expect more recipes. The options are endless. Here is one of our favorites: Chocolate Coconut Chia Seed Pudding. I bet I had you at chocolate.

So, if you haven’t jumped on board the chia seed train, just do it already.


Tropical Chia Seed Pudding {Mango, Banana, Coconut}

Makes about 3 1/2 cups, recommended serving size 1/3 cup


1 medium banana, ripe

1 red mango, peeled and diced (about 1 1/2 cups)

1 can light coconut milk (14 oz).

1/3 cup chia seeds

1 1/2 Tbsp honey


In a blender, combine banana, 1/2 cup mango, coconut milk and honey, until well-blended (about 1 minute). Transfer to a large jar or glass container (with lid), add the chia seeds and the rest of the mango, seal with lid and shake well. Let sit in fridge overnight and enjoy in the morning and throughout the week as a healthy and slightly sweet snack.

  3. Are they crunchy? Or like tapioca. I’d prefer the latter :)

    Not crunchy at all. I’m not much of a tapioca fan, but I’d say they are more like tapioca, but smaller and you don’t have to chew them like tapioca. Try it! I bet you’ll love it.

    Do it! You must. We still have another ripe mango, so I bet we will do the same! Our 1st batch went fast.

  7. Can you use regular coconut milk from a carton or does it have to be the full fat canned kind?

    Yes, you can use coconut milk from the carton and it should set up fine. I used the light coconut milk in the can (from TJs) since it seems to have a richer coconut taste. Enjoy! :)
