Slow Cooker Chicken & Lentil Curry

I know, I know. It’s so the opposite of slow cooker season right now.

I needed chicken curry though, and I had a whole afternoon to kill. The cloud cover beckoned me because the beach was not an option. Darn June gloom, we get it bad around these parts.

I don’t know which is the lesser evil: shoveling in raw whole almonds as a “small” snack until you realized you’ve gone through your week’s supply in less than 5 minutes… orrrr taking a jar of homemade almond butter, foregoing the apple slices, and guzzling it down by the spoonful.

Dutch Baby {with Spiced Nectarine Blueberry Compote}

Have I mentioned that Chrissy and I have been taking barre classes? I think so.

This Dutch baby was well deserved after a week of barre. Our legs are shaking, our booties are sore, and I desperately needed a sweet breakfast.

My go-to recipe is simple: olive oil, garlic, salt, and pepper, sautéed until tender-crisp.
