Smoked Salmon Spread {with watercress & cucumber}

by Lauren

So, last week was crazy busy. We missed you guys. Apologies for the lack of posts but between a few late nights at work, wedding planning, graduation parties, and other various commitments, things have been hectic.

Despite pure exhaustion from driving 381 miles this weekend (ok, so maybe Chris drove, but Chrissy and I were wonderful co-pilots) we are back in action in the LYK this week and bringing you the best spread since butter.

Seriously though. Homemade lox spread with a splash of lemon juice, fresh watercress, and cucumber doesn’t even compare to what you could purchase in the store.

You can see the little pieces of smoked salmon and that blush pink color is totally authentic. This can most definitely be used as a dip too!

Last weekend as we picnicked outside the Hollywood bowl awaiting the Fleetwood Mac concert, we sipped white wine straight from Napa, enjoyed smoked salmon spread and watercress sandwiches, played cribbage, and pre-jammed to some good ol’ Fleetwood Mac.

My mom gets all the credit for this recipe. I didn’t do one darn thing to help make it, but I happily accepted leftovers and made a bagel sandwich.

While it doesn’t matter what vegetables you put on your bagel sandwich, do make sure you top it off with lemon pepper and use this fantastically simple, homemade, smoked salmon spread.

Smoked Salmon Spread

1/2 (8-ounce) package cream cheese, softened

3 tablespoons finely chopped cucumber

3 ounces smoked salmon, thinly sliced

1 teaspoon minced watercress leaves

1/2 teaspoon lemon juice

1/8 teaspoon salt

1/8 teaspoon pepper

Add cream cheese to food processor and blend until smooth, 8-10 seconds. Add the rest of the ingredients and process until well blended. Serve with white bread or on a bagel. Makes about 6 servings.

  1. I’m not a huge smoked salmon lover, but it’s one of those foods I always want to try to see if I like it more than I used to. This looks like the PERFECT way as it looks amazingly delicious!

  2. Ohhh goodness I LOVE smoked salmon! I need to make this spread for my next party :)
