Raw Corn & Blueberry Salad {with Honey Lemon Vinaigrette}

If I’m being honest, things got less than wild in the kitchen this weekend. This salad was a result of starvation turned healthy and delicious snack.

It’s so, so simple. Perhaps one of the simplest things I’ve ever made for you. Well, technically I made it for me, but I would have shared if you were here.

We had quite the busy weekend, and I really needed a refreshing pick-me-up on Sunday afternoon. Plus, it’s going to make a great 4th of July recipe for you!

We bought a gigantic flat of perfectly plump blueberries from Costco. You will most likely see a few variations on blueberries over the next week or so. It’s convenient because they are blue and you are making red, white and blue foods on Thursday, right?

Bring this to your 4th of July potluck and it will be a hit, guaranteed. People will love having something light and fresh to go alongside the charred hotdogs and potato salad.

The sweetness from the blueberries and corn is offset by the slightly tart dressing and trust me, it becomes sunshine in a bowl once you drizzle that on top.

Feel free to add a little chopped parsley to this salad. My busy-weekend-brain caused me to forget that ingredient but I do think it would be a lovely color and flavor addition to this dish.

Raw Corn & Blueberry Salad {with Honey Lemon Vinaigrette}

Serves 4 as a side dish

Ingredients

2 ears of corn

3/4 cup fresh blueberries

3 green onions, thinly sliced

1/4 cup chopped parsley, optional

Vinaigrette

1/8 cup olive oil

1/8 cup lemon juice

2 teaspoons honey

pinch of salt and pepper

Directions

Whisk together olive oil, lemon juice, honey, salt and pepper.

Using a knife, shave corn off of the cob and place in large bowl. Mix in blueberries and green onions. Drizzle with dressing, toss, and serve.

  1. I think New England corn is just the best corn, ever. Eating it raw is new to me, but something I will definitely try this summer!
