Cakey Banana Chocolate Chip Cookies {+ coffee ice cream sandwich}

These cookies are soft, fluffy, and have just the perfect amount of banana flavor.
I’m not sure yet if they are more on the chocolate chip cookie gone healthy side, or more of the slice of banana bread gone unhealthy side.

It doesn’t really matter because, regardless, I will eat 5 in one sitting. They are as light and cakey as air, and they seem to vanish by the handful.

Just when we thought it couldn’t get any better we added a scoop of coffee bean ice cream, sandwiched in between 2 of these freshly baked and cooled cookies.

The hint of banana with the coffee and chocolate chip cookie combo is the perfect amount of sweetness…unlike these bad boys from the Baked Bear.

Yea, these custom ice cream sandwiches are pretty tasty, but will probably put you in a sugar coma. This combo was red velvet cookie + funfetti cookie + cookies ‘n’ cream ice cream in the middle. Yum.

Anyways, if you’ve never made your own impromptu ice cream sandwich, you must. They are so fun, so delectable, and only slightly gluttonous.

You could even make a bunch in advance, and keep them in the freezer until they are ready to be consumed. People would just love you for it.

It’s also perfectly ok to make a sandwich for yourself, and scarf it up right then. You may have a small pool of melted ice cream surrounding your last bite of cookie sandwich, but it makes for a good cookie dip.

Cakey Banana Chocolate Chip Cookies

Print Recipe!

Makes: about 3 dozen cookies

Ingredients:

1/3 cup butter, softened

½ cup brown sugar, packed

1 large egg

1/2 cup mashed ripe banana (about 1 medium)

1 tsp vanilla extract

1 cup all-purpose flour (or white whole-wheat)

1 tsp baking powder

1/8 tsp baking soda

1/8 tsp salt

1 cup semisweet chocolate chips

Directions:

Preheat oven to 350.

In the bowl of the stand mixer, cream butter and sugar until light and fluffy. Beat in the egg, banana and vanilla until fully combined. In a separate bowl, combine the flour, baking powder, baking soda and salt; gradually add the dry mixture to the wet mixture and mix well. Stir in chocolate chips.

Using a cookie scoop (or spoon) drop 1 Tablespoon of cookie dough onto a silpat or parchment lined baking sheet, placing about 2 inches apart. Bake for 9-11 minutes or until edges are lightly browned. Let sit on baking sheets for 1-2 minutes before transferring to wire racks to cool.

Option: when cookies are cooled, place a scoop of coffee ice cream (or desired flavor) in between two cookies and gently press together, evening out the ice cream on the sides of the cookies. Freeze until later, or enjoy immediately!
