So I’ll finally admit that it’s feeling like Fall. I’m all about it now.

I love a hearty bowl of homemade oatmeal in the mornings to get me energized for the day.

My usual go-to consists of oats, cinnamon, chia seeds, vanilla protein powder, and dried cranberries and/or fresh fruit, like bananas, strawberries or pear.

Well, with the fall season officially here and the craving for pumpkin-spice flavored EVERYTHING constantly leaves me with half-used cans of pumpkin puree, this is a great way to use the left overs!

If you like oatmeal in the mornings, but tend to grab a pre-made Quaker packet and call it a day, puh-lease think twice! It is so simple to prep your own “packets” in ziploc baggies, or better yet, in small tupperware containers. I do this every Sunday night and have them ready to go during my weekday mornings.

Then, once I get to work, I grab my glass bowl, pour the dry oatmeal contents into the bowl with water, and add the additions from there, like fruit and milk.

This delicious version has a few more ingredients than my usual, so its easier made at home, however if you plan ahead you can totally mix off these things in a container, the morning of and then heat and eat at work.

My co-workers see me making my oatmeal almost every morning, and a few of them have caught on to the ease of making their own. Then my heart sings.

Enjoy this warm and cozy oatmeal dish to fire you up each day. You can take on so much more when you aren’t sluggishly regretting that heavy fast-food breakfast sandwich or the lack of breakfast altogether.

 

Pumpkin, Coconut & Banana Oatmeal

Print Recipe!

Serves 1

Ingredients:

1/4 cup old fashioned rolled oats

1/8 tsp cinnamon

1 Tbsp vanilla whey protein powder (optional, or use your favorite kind)

1/2 Tbsp chia seeds

1 Tbsp pumpkin puree (not pumpkin pie filling)

1 1/2 Tbsp shredded coconut, unsweetened

1 Tbsp raw pepita seeds

1 tsp pure maple syrup, optional or to taste

1/2 cup water

1/8 – 1/4 cup coconut milk, unsweetened (we used beverage in carton, but you can indulge with the canned stuff!)

1 banana, sliced

Directions:

In a large microwave safe cereal bowl, add oats, cinnamon, protein powder, chia seeds, pumpkin puree, coconut, pepitas maple syrup, water and mix until combined. Cook on high in microwave for 2 ½ to 3 minutes, stirring halfway through. Depending on what size bowl you use (larger vs. smaller), be sure to keep an eye on it so the oatmeal doesn’t spill over.

Carefully remove from microwave, as it will be hot! Mix in sliced banana, desired amount of coconut milk and enjoy this delicious Fall –inspired breakfast!

  2. YUM!! I just made a sort of similar breakfast, but it was a cold muesli. Pumpkin and oats is the best way to start the day!

  4. I love y’all blog and just had to comment because I have been eating my version of this exact same dish every morning for the past couple of weeks! I can’t get over how good the pumpkin, banana and coconut are together with the cinnamon and a little pumpkin pie spice! I’ll have to think about adding some vanilla to the mix.
