Homemade cinnamon rolls are one of the best Christmas morning treats. If you aren’t a kid anymore and don’t jump out of bed at the crack of dawn to rip open your stocking or anxiously peruse the gifts under the tree, you might still need an early Christmas morning wake-up call. Nothing does a better job at waking the household up from pleasant Christmas eve slumbers, than freshly baking sweet cinnamon rolls wafting throughout the house.

This Christmas we’ll be marching to the beat of a different little drummer boy as we switch it up from the classic cinnamon roll to these insanely delicious Chocolate, Coconut & Almond Cinnamon Rolls.

This Almond Joy flavor combo is one of our absolute favorites, and they are every bit as scrumptious as they sound, all rolled up into a sweet baked pastry. Although there is no butter used in this recipe, they are still just as buttery, cinnamon, sugary and doughy as you would expect any other cinnamon rolls to be, but wayyyyy better.

Since we were being good and cut out the butter, we figured it was only right to add a sweet coconut crunch topping, finished with a drizzle of simple icing. That’s our treat we get for being good. Smile

Chocolate Coconut Crunch Cinnamon Rolls

Makes: 12 rolls

Prep Time: 50 minutes

Inactive Time: 2-1/2 to 3 hours

Bake Time: 25 to 30 minutes

 

Ingredients:

Rolls:

1 envelope Fleischmann’s® Active Dry Yeast

1/4 cup warm water (100º to 110ºF)

3/4 cup coconut milk (either light canned or the unsweetened beverage drink)

1/4 cup coconut oil

1 egg, plus 1 egg yolk

1 teaspoon Spice Islands® Pure Vanilla Extract

3 to 3 1/2 cups all-purpose flour, plus more for dusting work surface

1/2 cup white sugar

1/3 cup (rounded) cocoa powder, sifted

1/2 teaspoon sea salt

 

Filling:

1/4 cup coconut oil

3/4 cup brown sugar

2 teaspoons Spice Islands® Ground Saigon Cinnamon

 

Topping:

3/4 cup unsweetened shredded coconut

1/2 cup brown sugar

1/2 cup chopped almonds

3 Tablespoons coconut oil, melted

2 1/2 Tablespoons Karo® Light Corn Syrup

 

Glaze:

1 3/4 powdered sugar

1/4 cup coconut milk

3/4 teaspoon pure vanilla

Directions:

Stir the yeast into warm water in a large mixing bowl, fitted with dough hook attachment, and let stand 5 minutes. In a glass dish, heat coconut milk and coconut oil until warm (100° to 110°F) and add to bowl to combine with water and yeast. Add egg, egg yolk and vanilla, then stir to combine.

In a separate bowl, combine 1 1/2 cups flour, sugar, cocoa, and salt. Add to wet mixture and mix for about 2 minutes with electric mixer until smooth and well combined. Add the rest of the remaining flour to make a soft dough. Beat for another 2 minutes; if it is still too sticky, you may need to add a little more flour (possibly up to 1/2 cup more). Turn out onto a lightly floured surface and knead for 3 to 4 minutes, until the dough is smooth and elastic (sprinkling a little flour, if sticking to hands). 

Place dough in a large greased bowl (can use the bowl of electric mixer, if most of the dough is scraped out), cover with a clean towel. Let rise in a warm draft-free place for about 1 1/2 to 2 hours, or until dough has doubled in size.

Punch dough down (the fun part!). On a lightly floured surface, roll dough into a 15 x 10-inch rectangle. spread melted (but not hot) coconut oil over entire surface. In a small bowl, combine brown sugar and cinnamon and sprinkle, evenly, over the coconut oil. To roll up, start with a long end and roll somewhat tightly, sealing the end seam by pinching into the roll. Cut into 12 equal pieces. Arrange rolls in a greased 13 x 9-inch baking dish.

For almond coconut topping, in a small bowl, combine shredded coconut, brown sugar, chopped almonds, coconut oil, and light corn syrup and sprinkle over tops of each roll. Cover pan loosely with plastic wrap and let rise until doubled, about 1 hour.

Bake in preheated 350ºF oven for 25-30 minutes or until lightly browned. Remove from oven and allow to cool, while preparing glaze. To make glaze, in a bowl mix powdered sugar, coconut milk, and vanilla until a pasty and smooth consistency, adding more milk if too thick for drizzling. Top semi-cooled rolls with glaze, evenly, and enjoy immediately.

  1. I love making no-bake cookies actually! The ones you freeze or let solidify on the cookie tray. Those are always so good to me! I love baking with no butter or eggs, and if I can help it, no sugar too! So cookies that contain bananas, oatmeal, applesauce… right up my alley (since I’m gluten free!) However, anything that includes peanut butter (with sugar, butter, or eggs included or not!) I will definitely love to try!

This year we made sugar cookies, egg nog logs (yum-o), peppermint cookies, and my absolute favorite Oreo bon-bons! They are so rich and decadent, but so easy and fun to make :) I also enjoy baking your Double Chocolate Strawberry and Zucchini Muffins- mmmm! and am looking forward to trying the Toasted Coconut Lemon Bars.
