Salads are usually healthy go-to meals. But we as we have learned from restaurants and fast food places fessing up to the calorie count and ingredients, we know that salads aren’t always the healthiest of options out there; the culprit being fatty dressing and processed, chemical-laden ingredients.

Bleh.

How to remedy this? Easy. Get to the store, buy some fresh ingredients and produce and make your own salad and dressing. Boom. Case closed.

We’ve done a few tasty salads that you definitely don’t want to miss out on, and this Roasted Veggie Salad is one of them. It’s healthy, delicious, and easy to make a head of time and  for a crowd.

The flavor profile of the dressing has great personality; I’m sure you will make great friends.

This salad is also very versatile. You can roast a mixture of your favorite veggies to add to this salad. These were the ones that I had on hand, and they were simple and yummy.

I’ll share a little secret on how to make lunch-prepping an easy part of your life: take an hour on Sunday, and prep all your salads for the week, keeping them in airtight containers, just leaving aside any items that might need to be added the day of (like avocado). Make your dressing and keep in a glass canning jar or in individual portions for each day.

To make a more hearty version, grill up some chicken or add your favorite type of beans for added protein and substance.

It’s the new year, so don’t worry about those resolutions, just make some changes! Good intentions don’t mean squat if there isn’t action to back them up.

Roasted Veggie Salad with Lemon Basil Vinaigrette

Serves 4-6

Ingredients:

For the roasted veggie salad:

1 red bell pepper, seeded and diced

1 green bell pepper, seeded and diced

8-10 brussels sprouts, quartered

4 green onions, green tops removed

2 Tablespoon olive oil

1 ½ teaspoons garlic salt (or ½ teaspoon salt, plus 1 minced garlic clove)

½ teaspoon black pepper

1 avocado, sliced

8 cups mixed baby greens

2-4 ounces crumbled feta cheese

 

For the Lemon Basil Vinaigrette:

½ cup basil leaves

½ cup olive oil

2 Tablespoon lemon juice

1 teaspoon dijon mustard

1 clove garlic

1 Tablespoon minced shallot

¼ teaspoon salt, or to taste

¼ teaspoon black pepper

Directions:

On a foil-lined baking sheet, toss the red and green bell peppers, brussels sprouts, green onions (white part only, left whole), olive oil, garlic salt, and pepper; spread evenly and roast at 400 for 30-40 minutes, tossing once or twice throughout cook time. Veggies are done when fork tender and crisp. Set aside to let cool completely before adding to salad.

Using a blender or immersion blender, combine all vinaigrette ingredients and blend for 30 seconds to combine well. Taste and adjust seasonings, if desired.

Add mixed baby greens to a bowl, top with room temperature or chilled roasted vegetables, sliced avocado, and crumbled feta. Toss with desired amount of dressing, or serve and dress individual helpings. If preparing ahead of time, squeeze a half a lemon over avocado slices, so they stay fresh and green.

    I scarfed it down in no time. It was such a tasty salad. The Vinaigrette is so flavorful, I only needed a minimal amount. :)
