I am SO excited to share this with you! I have a totally new level of banana bread love going on now; I was a fool for thinking it couldn’t get any better, because it just did.

I can’t hold it in any longer. This banana bread recipe has to be the healthiest sweet bread out there. This recipe doesn’t employ the evil profile of butter or fatty oils (some are good, don’t get me wrong), but instead uses chia “gel” (chia seeds + water), to cover for the calorie-laden alternatives.

As I was perusing the Fitsugar site, for some healthy baking inspiration, I came across a similar recipe. Believe me, I was a complete skeptic that this substitute would actually yield a good result. To my surprise, it was better than good, it was perfect.  The texture is moist (is there another word for this one yet??), soft, yet dense, and the flavor is such a delight with tons of tasty banana flavor & morsels  of chocolate, because a good banana bread almost always calls for a healthy amount of semi-sweet chocolate chips :).

Not that were counting calories, because ain’t nobody’s got time for that, even with the chocolate chips, a big ol’ slice will run you about 170 calories. And usually I snack half of that, for a morning boost or midday treat.

You can bake this in one loaf or split it up between 4 mini loaf pans and just keep an eye on the time, as it will bake for a bit less. The little ones pack up nicely for little gifts, treats, or bake sale items.

If you are one person trying to consume a whole loaf, then it might be a good idea to bake the mini loaves and then freeze 1 or two, to take out for a rainy day. Just let them defrost, and reheat in the oven and it’ll be like freshly baked that day, without all the cleanup!

Chia Banana Bread with Chocolate Chips {NO oil, butter or yogurt}

Get Recipe!

Makes 1 loaf (about 12-15 slices), or 4 mini loaves

Ingredients:

½ cup chia gel (½ cup water, with 1 Tablespoon chia seeds, soaked for 30 minutes),  or virgin coconut oil

½ cup maple syrup or dark brown sugar

1 1/2 teaspoons vanilla

2 eggs

3 ripe bananas

1 ¼ cups white whole wheat flour, (or GF flour, if desired)

½ cup ground wheat germ (or ground flaxseed for GF)

1 teaspoon baking soda

1 ¼ cup semi-sweet chocolate chips

 

Directions:

Preheat oven to 375 degrees.

In an immersion blender, food processor, or blender, cream chia gel (that has already been sitting for 30 minutes, stirring or shaking occasionally). It will be a little frothy.

If using an immersion blender—pour frothy chia gel into bowl of stand mixer and combine with maple syrup, vanilla, eggs (one at a time) and bananas, and mix until well combined and fluffy. In a large bowl, combine dry ingredients and chocolate chips. Gradually add to banana mixture and mix until just combined. Pour into lightly greased loaf pan. Bake for 40-50 minutes.

If using a food processor or blender (and want to save on dishes)— add maple syrup and vanilla to frothy chia gel and combine until fluffy. Then add eggs, one at a time, and lastly bananas, and mix/blend until well combined. In a large bowl, combine dry ingredients and chocolate chips, add banana mixture and mix until just combined. Pour into lightly greased loaf pan. Bake for 40-50 minutes.

  1. Uh oh, just realized I don’t have wheat germ… Can I leave it out or should I add more flour?

    Corinne!! You can leave it out and use an extra 1/4 cup flour, adding in a little more if the batter looks too wet. Hope you are doing well, and enjoy!
