Vanilla Cardamom Oatmeal {with strawberry hearts & coconut}

Happy Valentine’s Day!!! I hope you have plans to celebrate and spread love with your honey or your best pals.

Today, I have a fantastic oatmeal recipe that will give you breakfast all week long, topped off with strawberry hearts because of this magical holiday.

It is magical isn’t it? Flowers, chocolate, and teddy bears are handed out like candy.

If you’re anything like me, you’re a sucker for any holiday because it’s an excuse to enjoy an over-the-top meal. Chris and I are planning on a lovely surf n’ turf fondue party for two. We will be cozy at home instead of among the crowds and prefixed menus.

Anyway, I’m kind of an oatmeal aficionado these days. Hence the fancy oatmeal recipe. I put all kinds of concoctions together to keep things interesting for my breakfast each day. This is the most recent, and I hope you enjoy!

Vanilla Cardamom Oatmeal

Ingredients

1 cup steel cut oats

2 cups water

2 cups unsweetened almond milk (if sweetened, omit sugar)

2 tablespoons brown sugar or maple syrup

1/2 cup shredded unsweetened coconut

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon cardamom

1 teaspoon vanilla extract

1/2 teaspoon salt

Strawberries or other fresh fruit

Directions

In a pot or dutch oven, bring the water and almond milk to a gentle boil.  Stir in the oats, cinnamon, cardamom, nutmeg, brown sugar, vanilla, and salt and return to a boil.  Decrease to low heat and partially cover.  Cook the oats, stirring occasionally, for about 25 minutes or until thickened.  Remove from the heat and stir in the coconut. Serve warm with a little bit of extra milk and strawberries or other fresh fruit, or let cool and save for the week ahead.
