Simple Asian Sesame Slaw

I’ve been wanting to go on a picnic for quite some time now. Granted, it’s not exactly picnic season, hence the pouring rain this past week, but now that’s it’s bright, sunny and 70 degrees again, I think I can start thinking about my picnic menu again.

Asian Sesame Slaw_LYK4Even if it’s indoors, I just like the little slaws, sandwiches, wraps, no-heat sides, salads, and chips and dips.
This slaw is certainly a perfect make-ahead salad, as it can stay dressed for a couple hours and still retain a good crunch. You can also make it really ahead, like the night before, and just keep the dressing on the side until the next day.

It’s simple to make, prepare and transport-friendly.

I’m not the biggest coleslaw person out there (mayo scares me!), but this soy vinaigrette tossed slaw is simple and darn tasty.

Asian Sesame Slaw

Serves 10-12

 

Ingredients:

1 bunch (6 large) scallions, trimmed and thinly sliced

2 (16-ounce) bags, one of green and one red cabbage, or 2 small heads of each, shredded

1 1/2 cups shredded carrots

1 small red onion, thinly sliced

1/4 cup low-sodium soy sauce

1/3 cup lemon juice

1/4 cup canola/olive oil

2 tablespoons grated fresh ginger (from about a 1-inch piece)

4 tablespoons rice vinegar

1 tablespoon dark brown sugar

2 teaspoons toasted sesame oil

2 teaspoons sesame seeds, lightly toasted in a skillet

1 teaspoon salt

3/4 teaspoon black pepper

 

Directions:

Toss both kinds of shredded cabbage, the red onion, carrots and scallions together in a large bowl until everything is thoroughly mixed.

For the vinaigrette, whisk the remaining ingredients together until blended, then pour over the slaw and toss to coat completely.

If making for the next day, keep slaw and vinaigrette separate and toss before serving. Also goes great in pulled pork sandwiches!
