Mocha Chia Seed Pudding

Chris hates coffee, but he will take a quick shot of espresso in one gulp to get a boost. I think the fancy new coffee machine by parents got me for my birthday is wearing him down, bit by bit. Soon, I’ll have him sipping a whole cup slowly on Saturday mornings with me.

I thought adding chocolate to coffee would help ease him into it. My math skills failed me yet again though: chocolate + anything = great. Nope, he was not a fan of my mocha chia seed pudding.


Coffee haters, this is not for you. Coffee lovers, continue on.

Maybe the hype with chia seeds has dwindled a bit but I still find them to be fantastic additions to my oatmeal, cookies, granola, and as a snack in the form of chia seed pudding.

This version will give you a caffeine and chocolate fix in one sitting!


Mocha Chia Seed Pudding


1/4 cup chia seeds

1/4 cup brewed coffee, cooled

1 1/4 almond milk

1-2 tablespoons maple syrup (depending on how sweet you want it)

1 tablespoon unsweetened cocoa powder


Add all ingredients to a mason jar. Shake until all the clumps are gone and refrigerate for 1-2 hours, until set. Alternatively, you can whisk the ingredients together in a bowl or container, cover and refrigerate.
