These days, I need all the little on-the-go snacks I can get my hands on. I’ve been working like a mad woman, running around like crazy trying to finish out the transition from my old job to the new gig, of owning my own business.

In short, these little protein bars are the perfect energy source to keep me going.

I don’t know about you, but the chocolate, coconut, & almond combo is one that I can’t resist. Just writing that out made me wish I hadn’t just polished them off today…

They are a great source of protein, fiber, good carbs, good fats, omegas, and flavor, all nicely packed into one little bar of Almond Joy goodness.

When I make a batch, I like to cut some of them into smaller, more bite-sized squares for a quick little treat, and also because I’ve realized that I have a problem with portion control when it comes to these homemade protein bars. They are my new weakness. I think I’ve accidentally skipped meals because I’ve filled up on these throughout the day…oopsies…

So this way, if I can just pop one little square in my mouth, instead of unwrapping a whole bar, there is a much better chance that I will stop there.

They have the perfect texture, crunch, and chew to them. They will keep in the fridge for a couple of weeks, just keep them wrapped up tightly. You can also freeze them if you know you won’t get to them all for a while, although I would also want to meet you because you would be some kind of a phenomenon.

Enjoy! These bars are an amazing snack any time of the day, but especially when you need a boost to get you through until the next meal!


Almond Joy Protein Bars

Print Recipe!

Makes 12 small bars, or 9 bigger bars


1 cup oat flour (or regular oats ground up in a blender)

1/2 cup old fashioned oats

1/2 cup chocolate protein powder (I used whey)

1/2 cup crispy rice cereal

¼ cup almond meal (or flour)

2 Tablespoons cocoa powder

1 ½ Tablespoons chia seeds

½ cup unsweetened shredded coconut

½ cup slivered almonds

dash cinnamon

½ cup almond butter

½ cup honey

2 Tablespoons coconut oil

1 teaspoon pure vanilla extract



Combine the oat flour, oats, chocolate protein powder, rice cereal, almond meal, cocoa powder, chia seeds, shredded coconut, and almonds in a large bowl.

In another glass bowl, combine the almond butter, honey, coconut oil, and vanilla extract and microwave for 30-60 second, until just melted and can be easily mixed together.

Pour almond butter mixture over cereal mixture, stirring until coated. It’s easiest to use a spoon first, then use your hands or even better use gloves, to really mix everything together well, until there is not more dry mixture and it sticks together when pressed.

Press mixture firmly into an 8-inch square pan/baking dish, with the bottom covered with plastic wrap, using your hands to firmly press it into the dish, evenly. Cover with another layer of plastic wrap and place in the fridge to chill for at least 30 minutes.

Cut into 12 bars. Wrap bars tightly in plastic wrap and keep stored in the fridge.

    I made these bars this weekend for my son who needed a ‘pick me up’ after his football practices. He loved them – but so did I. They taste sweet enough to be a chocolate bar with more protein and ingredients you can pronounce. Thank you for sharing this recipe. I am enjoying the recipes you are sharing on your blog.
