Roasted Turkey, Brie & Apple Butter Wrap

For Mother’s Day weekend, although I wasn’t able to be with my Momma, I know she would have loved these tasty wraps. The smokey roasted turkey, and the sweet and tangy spiced apple butter spread remind me a little bit like the holidays and cooking in the kitchen together. The creamy brie and the crisp apple are the perfect fillings.

Now that I think of it, this is kind of like a cheese board wrapped up in a carb cloak. Mmm the best!

Speaking of cheese boards, Lauren and I made a lovely dinner for a few couples on Saturday night, and it was so much fun. We put together a tasty cheeseboard, some grilled mahi mahi skewers, these sliders  and this yummy salad.

We played some corn-hole and enjoyed the warm ambiance from the table lantern that Lauren and Chris had topped on their newly built and finished picnic table!

Dinner parties are the jam! Keep the décor simple, keep the food homemade and scrumptious, and always have a well stocked cheeseboard for hours of grazing.

Back to these wraps, they also make great picnic items, lunch or snacks for on-to-go enjoying. And they make wonderful baby shower menu items! I had the honor of catering a long-time family friend’s baby shower at a beautiful home in Laguna Beach last weekend and these along with some Chicken Pesto wraps went well with a lovely spread of salads and bite-sized appetizers.

 

Roasted Turkey, Brie & Apple Butter Wrap

Makes 4 wraps

Ingredients:

4 Whole Wheat Tortillas (12-inch work best!)

1 lb smoked turkey

1/3 cup apple butter

3 teaspoons whole grain mustard

1 1/2 Tablespoons light mayo

4 ounces brie cheese, sliced

3 to 4 small green apples, sliced and tossed in juice from half a lemon

1 1/2 cups arugula, or baby spinach

Directions:

In a small bowl mix apple butter, mustard, and mayo. Spread on each tortilla, generously. Layer with turkey, brie slices, apples, and greens (arugula or spinach). It helps to line up the apples so they don’t rip through the tortilla when rolling up. Wrap each tortilla up, folding in the sides as you go, so they are sealed off. Enjoy right away, or wrap in plastic wrap to enjoy later for lunch or a mid-day snack!
