Maple & Cardamom Salmon Burger {with Chipotle Aioli}

Soooo we’re going to Italy in THREE days!!! Chrissy and her man leave tomorrow and Chris and I are right behind them. We’re headed to Sorrento for our friend’s wedding where there will be a 5 course meal served over 4 hours, a man making fresh mozzarella, unlimited wine, and spectacular views.

We are so excited!

While they do many, many things regarding food well in Italy, they do not do burgers well. To combat our American cravings and enjoy a burger in honor of 4th of July (which we will be missing this year), I made salmon burgers.

An homage to to the seafood of Sorrento and the style of the Americans (wrapped in lettuce).

The smoky, chipotle aioli paired perfectly with the sweet salmon. While I ate this without  a bun, Chris had his with and both were delicious. Smoky, sweet, and spicy.

Something about cardamom has me addicted. I’m testing it out in everything these days and this burger was no exception to it’s amazing flavor. Enjoy these on your patio with a side of green salad and a glass of pinot grigio.

Maple & Cardamom Salmon Burger {with Chipotle Aioli}

Ingredients

1 lb. fresh boneless salmon, skinned

1/4 cup Grade B maple syrup

2 teaspoons cardamom

1 teaspoon smoked paprika

1/3 cup panko bread crumbs

1 tablespoon coconut oil

1 avocado, sliced

Lettuce or buns, for serving

2 teaspoons chipotle peppers in adobo sauce

1 garlic clove, minced

1/4 cup mayonnaise

1/4 cup plain Greek yogurt

Directions

Whisk together maple syrup, cardamom, and smoked paprika.

Place large chunks of salmon in the food processor and pulse until almost ground (see photo above). Move salmon to a large bowl and add the panko and maple mixture. Mix until thoroughly combined. Form into 4 equal size patties.

Preheat a large pan with coconut oil. Place patties in the pan and cook on medium-high heat until brown on the bottom, 3-4 minutes on each side.

To make chipotle aioli, combine chipotle peppers, garlic, mayonnaise, and yogurt in a small bowl.

Serve burger with avocado slices, aoili, and on bread with lettuce, or lettuce wrapped.

  1. We’re heading to Alaska in a few weeks and have big plans to catch salmon, so I printed this recipe to take along. I’m sure I’ll make it before we go with store bought salmon as well! Have a blast in Italy – please eat gelato, pasta and pizza for the rest of us.

    Hope your Alaska trip is a beautiful one! And please catch lots of tasty salmon and make some tasty burgers and other heavenly meals with it! Italy was AMAZING and we most definitely ate gelato, pasta and pizza EVERY DAY, maybe even twice a day :).
