Summer Squash Crostini {with ricotta & lemon}

Patty pan squash might be the cutest little vegetables known to man. They are such a pretty shape and are so tiny! I regret not taking a photo before I chopped them up for this recipe but Google it and you’ll have to agree with me.

While I used patty pan squash for this recipe, you can just as easily use yellow squash and zucchini if patty pans aren’t available to you.

Spring Sandwich {with clementine & sprouts}

Everyone’s favorite deviled egg, chocolate egg, and egg hunt holiday is upon us! As Jesus enjoyed family, friends, and food, so shall we in honor of his resurrection!

This sandwich clearly has no eggs in it but it would be a great brunch or lunch option for Easter Sunday. It’s light, fresh, and filling. Perfect for the grazing type of day.

Assorted Greens & Feta Tart {with crispy olive oil crust}

Spring has sprung! And it’s gloomy, drizzling, and cold in San Diego. Cold is of course relative at 63 degrees but either way, the last few weeks of winter were spent laying on the beach so Spring has yet to impress me.
