Simply Carnitas {tacos 2-ways}

These carnitas have been a long-time coming. Chris asks for them every time I ask what he wants for dinner. Had I realized how simple they were I would’ve appeased him long ago!

Not only are these a one-pot wonder – you just need a couple of hours around the house to watch them – but they also have so few ingredients! It’s also an extremely inexpensive meat to buy. I call that a win-win-win.

Irish Soda Bread Breakfast Sandwich {toasted with cheese and arugula}

Happy St. Patrick’s Day!! I hope you have your corned beef slow cooking away preparing itself for tonight’s feast.

Another classic for this holiday is that fantastic Irish Soda Bread. My mother-in-law handed me half of a loaf of her infamous version of the recipe as we left her house this weekend. She loads hers up with not only raisins but caraway seeds!

Baked Eggs with Wilted Greens & Green Garlic {Breakfast Dip}

Chrissy proclaimed this a breakfast dip and I’d have to agree with her, it is basically a dip. While I intended it to be eaten with a fork, we definitely did some damage on a baguette while enjoying it straight out of the baking dish.

The bread’s perfectly toasty crust and soft, warm center paired with garlicky greens and runny egg was flawless. Originally I had said this serves four but on second thought, it’s just for two.
