I bet you need a cocktail. Perhaps in celebration of the short week, or perhaps because it’s only Tuesday. You choose.
How about your favorite popsicle made into a cocktail? After a long weekend in the sun, we thought this creamy, fruity, vanilla drink was perfection.
I personally loved that we made it in our newly acquired mason jar with a handle. Which is now also my own personal cocktail shaker.
Chrissy and I surprised ourselves with the unbelievable resemblance this drink had to a Creamsicle (or Dreamsicle?).
A bright punch of orange with specks of vanilla bean and a splash of cream…it’s so good you almost forget about the mandarin vodka. Which could be dangerous.
Despite the almost completely masked flavor of the vodka, it is indeed in there. Drink responsibly and try not to chug.
By the way, you could totally make an adult Creamsicle with this recipe, the lick-able kind. Go ahead, pour the mixture into a popsicle mold, see what happens! Just don’t give it to the kids.
Creamsicle Cocktail
Makes 1 cocktail
Ingredients
1.5 oz. orange or mandarin vodka
5 oz. orange juice
1 oz. half and half
1/4 teaspoon vanilla bean paste
Ice
Directions
Combine all ingredients in a cocktail shaker or jar. Shake and sip over ice.
