Satsuma Sunset Cocktail

It’s the first Friday of the New Year. I think it’s about time for celebratory drinks, don’t you?

If you were lucky enough to have a week or so off work, and returned with a three-day work week, then you will probably agree that these past few days were grueling. It probably had something to do with sleeping in, shoveling holiday sweets into your mouth all day, partying with family and friends, and staying up late. Repeat.

If you weren’t that lucky, sorry, I don’t mean to bring up your misfortune. But since I did, here have a cocktail.

As a part of a fun little food project that Whole Foods Market put us up to, we were challenged to use the two different types of Mandarins—Clementines and Satsumas—in two different recipes. The flavors of the different Manderins were put to the test by our friends.

First up: Satsumas (pictured above, on the left).

Satsumas are bold in flavor; both sweet and slightly acidic, they make quite a distinct statement in recipes. We thought they would go best in a cocktail, paired with pomegranate flavors and pleasantly effervescent ginger beer. This combination creates one tasty sunset in a glass!

Don’t forget the fun brown-sugared rim!

This cocktail is on the sweeter side and with the addition of Mandarin-flavored vodka, you might even believe them to be mocktails. Until you stand up after knocking a couple back. Then suspicions would be confirmed and you would realize that they were the real deal the whole time.

Satsuma Sunset Cocktail

Print Recipe!

Makes 1 drink

Ingredients:

3 oz (2 shots) mandarin vodka (or plain, if preferred)
1.5 oz ( 1 shot) pure pomegranate juice
2 oz ( 1 1/2 shots) fresh satsuma mandarin juice
Ice
Brown sugar for rim
Pom seeds for garnish
Ginger beer, top off about 2-3 oz, or to taste.
Mint garnish (optional)

Directions:
First, garnish glass by running a slice of tangerine around the rim. Dip the top of glass into some brown sugar so it clings around the rim (easy if placed on a shallow plate), and set aside.

Pour vodka, pomegranate juice, fresh satsuma mandarin juice and a handful of ice into a shaker and shake to combine and chill. Pour contents over a handful of ice in sugared glass. Top off with a splash (or a bit more) of ginger beer, garnish with pomegranate seeds and a spring of mint.

Thanksgiving Meal Round-up: Desserts!

Dessert is a valued item, which is absolutely necessary to end any great feast. Served with a hot pot of coffee, Spiced Cider, or just some more wine, here are some real winners…

 

Baked Brie Bites: Appetizer OR dessert, it doesn’t matter which one, just that they are included at your holiday meal.

Orange Zest Shortbread with Dark Chocolate Drizzle: Simple, elegant, absolutely delicious!

Spiced Wine-poached Pears with Nutella Mascarpone Filling: Fruity and decadent. These are ah-mazing.

Pumpkin Spice Snickerdoodles: Always a fan favorite, just a little spiced up!

Vanilla Bean Creme Brulee: individual creme brulees are always welcome at a dessert buffet. (Previously frozen) mixed berries, would also be a great topping, since fresh might be hard to come by.

Breakfast Power Smoothie {chocolate, banana, pineapple, coconut}

So if you are anywhere else in the world, you might not think that this cold smoothie would be a great breakfast option, but if you are still getting drenched in sweat when you take a walk outside, then this is just the thing to cool you down. Apparently, Southern California isn’t ready to kiss summer goodbye, just yet. I’m OK with this because TJ’s decided to bring in another shipment of their glorious flats of peaches, so we are stocked for another week, if we ration.

This power-packed protein smoothie is great for a quick breakfast or an on-the-go snack. And if you are still somehow waking up to 80 degree weather, you will definitely want this to cool you down.

Fun fact: Lauren and I cannot blow-dry our hair at the same time in our house or else the fuse will blow. We know this because we have had to reset the breaker at least 198 times.

Also, during the hot weather we found that it is impossible to even use the blow dryer without melting into a pile of sweat. My remedy was whipping one of these smoothies up in the morning, while I was getting ready so that I could cool down AND kick-start my metabolism.

Although, the heat issue may not be relevant to many of you in other season-changing states or countries, you would still benefit from the nutrients in this probiotic, protein-packed, fiber-ific, yet slightly chocolaty breakfast smoothie.

Breakfast Power Smoothie

Print Recipe

Serves 1, but easy to double, triple and  beyond.

Ingredients:

1/2 Tbsp flaxseeds, whole or ground

1 Tbsp wheat germ

1 tsp chia seeds

2 Tbsp nonfat Greek yogurt

1/2 cup water

1/3 cup pineapple

1/2 banana, sliced

1 Tbsp cocoa powder

2 Scoops Vanilla protein powder (I use Aria Protein Powder from TJs)

2 Tbsp shredded, unsweetened coconut

2-3 ice cubes

 

Directions:

Add everything to a blender, or a handy Magic Bullet, if you have one. It’s useless for almost everything else, but great for a quick single-serving smoothie. Blend for 40 to 60 seconds. Enjoy immediately!
