Oregano, Walnut & Feta Pesto

You’ve probably heard about the fires going on here in San Diego. Our prayers are with all those who are being affected. Fortunately, we are by the beach and far enough away from the fires that our air quality is still good and our homes are safe.

These cilantro smashed potatoes were a complete accident but now happen to be a new favorite dish. They are like mashed taters but not super rich and creamy, but super flavorful with a kick of spice so they pair perfectly with this lightly breaded fish.

You could certainly serve this Tilapia with a side of roasted veggies, if you are trying to eat a lighter meal, but you’ll be missing out on all the fun!

Fennel, Apple, & Dill Salad {with lemon dijon dressing}

We are all about balance in the LYK. Yesterday you had cupcakes, today you get salad. We realize a good indulgence every once in a while (chocolate at least once a day is a must for me) is totally necessary but we also recognize the importance of a healthy diet. I definitely keep a bag of truffles in my office drawer or stock up on the Reese’s at Halloween so I can have one a day after lunch.

Honey & Champagne Cranberry Sauce

Here it is, that Thanksgiving recipe I promised. It involves champagne. You know you’ll have a bottle of that open on Thanksgiving morning. If you can spare a cup, swap it for the water in your classic cranberry sauce and try this out.

I think a handful of chopped walnuts would also be fantastic in this.
