Autumn Kale & Butternut Squash Salad {with Yogurt-Mint Dressing}

Green leafy salads in fall are kind of like soups in summer. You really don’t associate the two, despite the fact that it’s perfectly acceptable to eat seasonal variations on the dish (i.e. gazpacho). Well, after this salad, I officially associate salad and Fall.

Deep green, chopped kale and spicy arugula topped with roasted butternut squash and juicy pomegranate seeds makes for a darn delicious meal.

Spiced Sweet Potato, Apple and Kale Quinoa

Quinoa never really had a place at the Thanksgiving table, but now I believe it does.

This dish includes a healthful repertoire of fan favorite ingredients, combined with spices to elicit a hearty Autumn scent.

Pumpkin, Sausage, & Sage Lasagna

I normally wouldn’t attempt to make lasagna. Although I adore it, it’s a tad time consuming. Layer after layer…after layer.

But I’ve decided that those layers and layers of cheesy, saucy goodness are soooo worth the time spent.

Especially when pumpkin is in the mix!

By the way, have you ever had rainbow chard?! It’s totally the new kale and definitely my new favorite green. The gorgeously colored stems may or may not have swayed me to this decision.

Autumn Salad with Maple Dijon Vinaigrette

No need to weigh yourself down with all comfort foods just because there is a chilly breeze in Fall. Chicken and dumplings, macaroni and cheese, beef stew, apple pie…obviously they are all necessary components of this wonderful season.

I needed something light for lunch. It was 80 degrees, but all the autumn food items are in grocery stores. Southern California is a conflicted place these days.
