Whole Roasted Cauliflower {with yogurt & goat cheese dipping sauce}

Funny looking vegetable, isn’t it? I promise it’s a cauliflower though. I wasn’t quite sure how to maintain it’s beauty once it was all chopped up so I decided to try roasting it whole and I have to say, Chris and I have decided it’s our new favorite preparation for cauliflower of any color.

Purple, orange, white, or green, we want it poached then roasted, and dipped in a creamy, tangy, cheesy, sauce.

Orange Ginger Cauliflower {with Carrot Ribbons}

Cauliflower is making a comeback. It’s becoming a hip veggie to cook up, I promise.

In the LYK, we’ve made “rice” with it, mashed it up with goat cheese to sub as a suitable mashed potatoes replacement, and roasted it with a savory lemon-tahini topping.

Point and case, you can get really creative with this mild-flavored vegetable.

Roasted Cauliflower {with Crispy Garbanzos and Tahini Dressing}

Cauliflower is making a come-back. I’m sure of it, because I felt so compelled to buy 3 heads of the stuff.

Cauliflower, Cranberry and Smoked Gouda Gratin

In the spirit of the Thanksgiving holiday (it’s almost time, people!) here is a festive cheesy gratin that will make you swoon.

While you are filling up on gravy-smothered turkey and mashed taters, we want you to remember to eat your veggies.
