Autumn Kale & Butternut Squash Salad {with Yogurt-Mint Dressing}

by Lauren

Green leafy salads in fall are kind of like soups in summer. You really don’t associate the two, despite the fact that it’s perfectly acceptable to eat seasonal variations on the dish (i.e. gazpacho). Well, after this salad, I officially associate salad and Fall.

Deep green, chopped kale and spicy arugula topped with roasted butternut squash and juicy pomegranate seeds makes for a darn delicious meal.

by Chrissy

Coconut Chia Chai Banana Bread_LYK13

Sometimes you have some pretty gnarly ripe bananas, but just don’t feel like making plain old banana bread with them, it’s time to get crafty. I like to change up the banana bread flavor, quite often. Here’s proof:

Mango & Chocolate Chip

Healthy Cranberry Flaxseed

Almond Joy

Strawberry Banana Yogurt Bread

Healthy Banana Carrot bread with Cranberries

And a personal favorite: Dark Chocolate Banana bread w/ Coconut
