Open-Face Tomato Sandwich {with creamy feta spread}

I’m still thinking about Italian tomatoes. I could eat them all day, every day…and I did for 2 weeks.

The tomatoes in Italy are so flavorful and sweet that even the seemingly unripe, green-ish tomatoes are better than any tomato I’ve had in America. Their tomatoes taste how a tomato should taste yet that flavor is still beyond your imagination unless you’ve had one.

Assorted Greens & Feta Tart {with crispy olive oil crust}

Spring has sprung! And it’s gloomy, drizzling, and cold in San Diego. Cold is of course relative at 63 degrees but either way, the last few weeks of winter were spent laying on the beach so Spring has yet to impress me.

Spinach, Feta, and Sundried Tomato Hummus

It’s been a while since we talked about about hummus. We were charged with making something green for our friend’s green card party. This hummus was my contribution. This was Chrissy’s.

I realize we have quite a few versions of homemade hummus in the LYK, but that’s the beauty of this dip.

You can add your favorite flavors to make it your own. Herbs, citrus, cheese, vegetables, spices…literally anything. Next up, curried hummus.

Lemon & Feta Aioli

Real aioli has raw egg yolk in it. That kind of freaks me out.

If I lived on a farm and knew the egg was coming straight from a chicken and into my food…or was, eh hem, very fresh, I might feel better about being authentic with my aioli. Until there are farms on the beach I’ll keep substituting with Greek yogurt and mayonnaise.
